
Recently I started teaching a new class–Fundamentals of Home Canning! I’ve taught a this class a couple of times now, and it’s been a lot of fun. Last week I was teaching a lively group through Merrymeeting Adult Education at Brunswick Highschool. In the class, I cover the basics of safe home canning, including proper procedures, techniques, and use of tools and equipment–basically all of the hows and whys of canning. We then made a big batch of apple pie jam, which everyone got to sample. (It was so good!) What I enjoy about this class, and what I think participants enjoy as well, is that the process that we learn in class applies to so many different foods one might want to can–not just apple pie jam. So, students go home ready to tackle any number of foods that can be canned in a boiling water bath canner, such as pickles, salsas, and chutneys. It was a fun evening!
